Brandied Apples

Salsa Gorgonzola


4 Pippin or Delicious apples, peeled, cored, and cut in
1-inch thick slices
4 tablespoons butter
1/4 cup brandy
Salt and pepper to taste
2 shallots, finely chopped

In a large non-stick pan, cook the butter over high heat until it sizzles. Add the apples and stir well, reduce heat to medium-high and cook stirring well for 2 to 3 minutes. Add the shopped shallots and cook for 2 to 3 more minutes. Increase the heat to high, add the brandy and make it flame to burn the alcohol. Cook, stirring well, for another 2 minutes. Add salt and pepper to taste.
